Redoak's Special Reserve is a barley wine speciality beer.
A barley wine beer is a dark English style ale which is almost fortified like a wine, hence the term ‘barley wine’. However, it is still a beer because it is made from grains, not grapes.
What distinguishes Redoak’s Special Reserve is that it has gone through three fermentations and is matured on various types of oak for over 2 years which adds a unique dimension and complexity to the beer.
Special Reserve Brewer’s tasting notes - It has a lovely aroma of alcohol with hints of vanilla. There is a sweet light maltiness on the palate which dominates the palate initially then dissipates as the flavour of vanilla comes forth and then explodes leaving an ‘exotic liquer-like’ finish. The beer is served in a custom-made crystal goblet to enhance the oak aromas, release the alcohol and develop the full flavours.

Redoak's Honey Ale a pale ale which has been infused with a generous amount of Tasmanian Leatherwood Honey from the world heritage listed wilderness area on the west coast of Tasmania surrounded by the Nelson and Franklin rivers. It is a refreshing, light bodied pale ale with a delicate leatherwood and musk aroma and flavour, followed by a slight bitterness and dry mouth-feel. (5.2%)

Rauch Bier, a German smoked lager, is the first of its kind to be brewed in Australia. Rauch Bier originated in Bamberg, Germany over 300 years ago. A rich copper coloured lager with a dense caramel head and a sweet, smoked malt aroma & flavour. This beer is a unique balance of sweet toasty malt with smoked accents and a warming finish. It is made of the finest Munich malts, Beechwood smoked malt, Redoak smoked malt & subtle hopping. This is a largely forgotten beer style since 17th century. David first tasted this beer style in 1994 and noted it was subsequently identified in 1997 by Michael Jackson (beer expert) to in fact be a beer style of its own. (5.5%)

Redoak Baltic Porter has been brewed true to style and is a rich tasting beer with a velvet smoothness on the palate, a burnt currant fruitiness, followed by a warmth embrace of alcohol. This beer style originated in Russia for Catherine the Great in the Royal Court in the 17th century. David first tasted a Baltic porter in 1994 in a small café in Poland and no-one seemed to know what it was. Internationally, it was a lost style until discovered by Michael Jackson (the Beer expert) in 1997. (5.5%)

If you haven't tasted the Special Strong Bitter yet, this high strength brew is not for the faint hearted. It is a rich, flavoursome full bodied bitter with strong caramel, toffee notes and floral aromas. This smooth drinking ale exhibits a strong hoppy bitterness and is perfect to enjoy after a big day. This Stout is a dark, full bodied roast malt ale with a velvet texture and thick ‘mocha-like’ head. It is brewed using a fine ale malt, English roast barley and a London ale yeast resulting in a smooth dark malt ale. The added oatmeal gives the beer its rounded body and finish. (5%)

Redoak's India Pale Ale has been brewed to the tradition of Burton-on-Trent in England. With ten times the amount of hops as our Organic Pale Ale the English Kent Goldings and Fuggles flowers have resulted in a fresh fruit aroma, lovely mouth coating and a huge back bitterness. The caramel malt flavour and big back bitterness will continue to linger. This India Pale Ale will extinguish and cool the hottest of dishes. 6.5%
CASK CONDITIONED HAND PUMPED REAL ENGLISH ALE
Redoak's real English Ale is brewed with a very strong hoppy note and poured on our new hand pump. Enjoy the very old tradition of an english beer poured by hand. A new cask is opened on the 1st and 3rd Monday of every month and is available on tap until it runs out.
Brewer Notes: The cask is brewed traditionally with the ale racked off into the cask before the end of fermentation with the final part of fermentation in the cask. It is conditioned for a period of time before the cask served at Redoak. We spear the cask and naturally vent it, allowing the beer to breathe and slowly oxidise, which imparts a nice sourness that is traditional to old cask conditioned real ales. It is then hand pumped with an English hand pump and served at 11 to 12 degrees Celsius, giving our customers the opportunity to taste the natural malt flavours, low carbonation and fresh hop aroma.
AMERICA INDIA PALE ALE
A heavily hopped Pale Summer Ale with a bold bitterness and quite fruity and floral characteristics. On the nose strong aromas of hop resins dominate and then mallow out into strong floral aromas. On the palate a malt sweetness opens up into a full bodied ale with a rolling bitterness that cascades over the top of the palate and coats the mouth, the sweetness of the malts then balances the beer and the bitterness mallows into a smooth finish. (6.5%)
Wee HEAVY ALE

The 2006 Vintage is a bold malt driven Scottish Ale with a deep, reddish brown hue. Redoak’s “wee Heavy” is a Scottish Ale in the traditional style, brewed using the finest Pale and Dark malts and a genuine Scottish Ale yeast. This brew is particularly complex with a smokiness created by a peated malt from McCallums Distillery in Scotland. With an alcohol content of 8% this rich, malty sweet ale certainly lives up to its name (8%) (2004 Vintage is available and 2006 Vintage due out soon)

MACQUARIE'S SCOTTISH ALE

Macquaries Scottish Ale is named in honour of Lachlan Macquarie (NSW Governor) and was first sampled by Macquarie University Alumni beer dinner in June 2005. It is a moderate strength ale dominated by a smooth sweet maltiness balanced with a low hop bitterness. A caramel nutty flavour and slight hint of honey is followed by a smokey aftertaste creating extra complexity to this style. (4.5%)
IRISH RED ALE

Redoak's Irish Red Ale is brewed in a traditional style of an Irish ale with natural carbonation creating a silky smoothness on the palate. It has a rich red-amber colour with sweet caramel malty notes and a nutty complexity. The moderate body and bitterness and fruity aroma create a refreshing finish. (4.5%)
ALT BIER
Redoak's German style Brown Ale has caramel malts on the nose with light phenolics which are initially followed by fruity complexities then an enjoyable dry bitterness on the finish (4.5%)
BERLINER WEISSE
Berlinerwiess is a very pale beer with a white foamy head with light body & low bitterness. (2.9%)
Did you know years ago in Berlin, Germany when Napoleon and his troops called this beer the 'champagne of the north' the brewers would actually store and condition the beer under ground for up to two years before it was served.
For those of you that know the German Beer Purity law of 1516 called "Rheinheitsgebot
Law" and would like a clue, then remember that this is the only beer style that the German Purity Law would allow to have additions put into it other than purely grain, yeast, hops and water. David being the eternal purist of course, always brews German beers according to the Purity Law but this is the only exception.
DARK ENGLISH MILD ALE
Redoak's Dark English Mild Ale is brewed as a traditional style mild ale. It has a lovely copper colour with a soft malty and caramel flavour. The flavour of this mild ale is impressive for a low alcohol beer. (3.4%)
DUNKEL WEISS
This German style dark wheat beer is brewed in the traditional Bavarian wheat beer style. It consists of pale and dark wheat malt with a touch of chocolate malts. This special winter warmer has subtle hints of chocolate complementing the banana and clove notes. (5.7%)
CZECH PILSNER
A Pale Lager, brewed with pale malts a lager yeast and the Czech Saas Hops. On the nose floral and fruity aromas can be found, such as honey, lychee and hops. On the palate a full bodied malt presence embraces the mouth, followed by a slow building bitterness that then mallows into a light dry finish.

HONEY BLOSSOM
Floral aromas intoxicate the senses when drinking this beer. The sweetness is well defined with a touch of malt and the beer becomes quite tart and dry, leaving a dry thirst quenching finish. (5.2%)
ZEST
Redoak’s Zest is a Belgian Blonde brewed with lemon, lime and ginger. This light thirst quenching and morish beer has been specially brewed in celebration of Redoak’s Head Chef’s first child.

OPERA BAR BLONDE

Redoak’s Opera Bar Blonde is a pale, cloudy Belgian style wheat beer, incorporating large proportions of wheat malt and a unique strain of yeast with a subtle spice. It has a spicy flavour with citrus and coriander notes. The low bitterness hints at a slight sweetness, giving way to a tart acidity on the finish. This beer is brewed exclusively for Opera Bar, near Opera House - Circular Quay (4.9%)
BROWN PORTER

Redoak’s Brown Porter has a malty aroma and mild roasted flavour with a hint of fruit such as currants. It’s moderate body is balanced with a slight bitterness. ( 5 %)
HOLLY PORTER
A strong bitter chocolate malt aroma eliminates form this beer with some subtle roasted complexities. A bitter chocolate characteristic is apparent and progresses into a mocha coffee explosion. The mouth feel is silky smooth and creamy finishing with a smooth roasted ness. (6.4%)
ROBUST PORTER
A full bodied Porter beer style with strong chocolate complexities and a robust roasted malt intensity. The nose exhibits a milky chocolate presence with sweet malts and light currant aromas. The chocolate sweet malt complexities open up into a stronger roasted malt and coffee complexities, with a dry bitterness and a dry roasted malt finish. (6.5%)
IRISH DRY STOUT

Redoak's new dry stout has a delightful creamy chocolate and coffee aroma. It has a creamy mouthfeel and initial malt flavour followed by a strong raosted bitterness on the finish (5%)
RUSSIAN IMPERIAL STOUT
This full bodied stout expresses a burnt currant aroma with strong roasted malt and sweetness. This sweetness playfully contrasts the roasted bitterness. The smooth dry roasted finish is then followed by a warm alcohol embrace. (10%)
EXPORT STOUT
A full bodied stout brewed with strong roasted malts and heavy amount of hopping. On the nose this stout offers a burnt currant aroma with subtle roasted complexities. The strong roasted intensities confront the palate that progress into a bold roasted bitterness and lead to a dry roasted finish. (6.5%)
WEIZEN DOPPLEBOCK

This beer has never been brewed in Australia before! It is a German style wheat beer with a powerful fruit and spice aroma and a creamy mouthfeel of banana and spices on the palate with a warming taste of alcohol and long complex finish. (8.4%)
