DAVID HOLLYOAK (Director & Brewer)
The man behind the concept of Redoak loves fine cuisine
and premium beers. So much so, he has created a range
of Premium Boutique Beers for all Australians to enjoy
in a bar atmosphere and at the dining table.
The extensive travelling and time spent with many brewers
throughout the world has done nothing but enhance his
passion for what was already his favourite past time:
home brewing.
In fact, David began brewing ginger beer at the age
of 14.
David has always been a man of passion and excellence:
when school boys were dreaming of cars, he was restoring
an old ford ute, when boys were studying for their
driving license, he was working two jobs to pay his
own way through
his pilot’s license. He would ride his bicycle 40km
for flying lessons and could legally fly before he could
drive. In striving for excellence, David has turned his
hand from Civil Engineering (Honours) to Brewing and attained
18 awards at his inaugral Australian International Beer
Awards 2004 – an awesome feat by any standards!
This has been achieved whilst studying an Associate Diploma
in Brewing, Ballarat University.
David has won the prestigious Grand Champion trophy at the Australian International Beer Awards 2006, won 2 Gold medals at the World Beer Cup 2006 (considered to be the Olymipcs of Beer), Champion Small brewery AIBA 2008 and a third gold medal at World Beer Cup 2008. These significant achievements demonstrate David's total commitment to world class craftsmanship and his never-ending pursuit for excellence!
David believes there is more to just ‘drinking beer’ and
wants to share his knowledge and passion for premium Boutique
Beers. David has developed a range of Redoak Specialty
Beers, which expand the palates of Australian beer lovers
allowing them to actually ‘taste’ and ‘savour’ their
unique flavours.

Who would you choose to help develop and manage your
own Boutique Beer Café? One of your eager mates
or one of your sisters?
David chose one of his sister (sorry guys!) But let
me say travelling the world visiting brewery after
brewery
and drinking beer after beer …HEY IT WAS
TOUGH WORK!
David’s first mission: to convert Janet from being
an avid champagne drinker to beer. Of this she was sceptical.
However, having travelled overseas for research, brewing
pilot beers, being involved in product development and
product testing (only tasting!), Janet became a converted
Beer drinker. Needless to say, here we are today as Redoak
Boutique Beer Café, reflecting Janets extensive
experience in retail, product marketing, customer service and of course her new love of Premium
Boutique Beers.
Janet wants everyone to enjoy the Redoak Experience:
from the beers, to the food, the service, the ambience
of the bar or dining room, the interior décor,
down to the glassware and as much of the Redoak story
as you would like to hear from Janet, David or one of
the Redoak Staff.
