DAVID HOLLYOAK (Director & Master Brewer)

The man behind the concept of Redoak loves fine cuisine and premium beers. So much so, he has created a range of Premium Boutique Beers for all Australians to enjoy in a bar atmosphere and at the dining table.

In striving for excellence, David has turned his hand from Civil Engineering (Honours) to Brewing and attained 18 awards at his inaugral Australian International Beer Awards 2004 – an awesome feat by any standards! This was then followed by the attainment of 35 awards at the 2005 Australian International Beer Awards - nearly doubling their results from the previous year. This has been achieved whilst also studying an Associate Diploma in Brewing, Ballarat University.

David's brewing successes have been amazing. He has achieved in a short space of time what some brewers spend a lifetime aspiring to. He won 2 Gold and 1 Bronze medal at the World Beer Cup, USA 2006 which now takes Australia's total tally of gold medals to six (6) in the history of the competition - of which David proudly holds 2 of them. He also won the Grand Champion Trophy at AIBA 2006 for the highest scoring beer judged against 974 other beers. He also won a Silver & Bronze medal at the European Beer Star, Nurnberg, Germany in 2007. Redoak was the most awarded brewery for the third year running at AIBA 2007. Redoak recently won 'Champion Small International Brewery' at AIBA 2008. David is proving that he is undoubtedly a 'world class' brewer.

David believes there is more to just ‘drinking beer’ and wants to share his knowledge and passion for Premium Boutique Beers. David has developed a range of Redoak Specialty Beers, which expand the palates of Australian beer lovers allowing them to actually ‘taste’ and ‘savour’ their unique flavours.
